For a few weeks each summer, there seems to be a seemingly never-ending quest to come up with as many creative ways to use zucchini as possible. Last summer, I spent a large part of our harvest perfecting a recipe for Poor Man’s Crab Cakes that uses no crab meat whatsoever. (Don’t even try pricing out how much it would cost to buy enough crab meat for a family of 9. It would blow the week’s grocery budget in one meal!)
When they started to see the fruit pile high on the kitchen table this week, the kids begged me to make this season’s inaugural batch!
